Layered Salad

 

Lettuce

10 Ounce Frozen Peas

1 Cup Diced Celery

1/4 Cup Green Pepper

1/2 Cup Diced Purple Onion

4 Hard Boiled Eggs

8 Slices Cooked Bacon

2 Cups Mayonnaise

2 TB Sugar

2 TB Vinegar

1/2 Cup Grated Cheddar Cheese

 

Mix Mayonnaise, sugar, and vinegar. Layer ingredients in bowl in the order listed.

 

 

Spinach Salad

 

2 Bunches Spinach

3 Green Onion chopped

8 Slices Bacon cooked and crumbled

1 Can Mandarin Oranges

1/3 Cup toasted Slivered Almonds

Dressing:

1/2 Cup Olive Oil

1/2 Cup Powdered Sugar

1tsp Salt

1/4 tsp Pepper

1/3 Cup Raspberry Vinegar

 

Combine dressing ingredients in blender. Refrigerate. Clean and dry spinach. Tear into serving size pieces. Toss all ingredients with dressing, just before serving. You may choose not to use all of the dressing.

 

 

 

Chinese Cabbage Salad

 

1/2 head Cabbage, shredded

4 Green Onions, chopped

2 TBL Sesame Seeds

1/2 cup Slivered Almonds

1 package Chicken Flavor Ramen Noodles

Dressing:

2 TBL Sugar

1/2 cup Oil

3 TBL Rice Vinegar

1/2 tsp Salt

1/2 tsp Pepper

1/2 package Ramen Seasoning Mix

 

Toast sesame seeds and almonds in 1 TBL butter. Combine with cabbage and onions and toss. Mix all dressing ingredients together and pour over salad 1 hour before serving. Break up. Ramen noodles and toss with salad. Serve immediately.

 

 

 

Poppy Seed Dressing

 

1 1/2 Cup Sugar

2 Cups Oil

2 TBL Onion puree

2/3 Cup Vinegar

2 tsp Dry Mustard

3 TBL Poppy Seeds

2 tsp Salt

 

In a blender, combine 1/2 of an onion and just enough water necessary to make smooth. Measure 2 TBL of onion puree (or slightly more) and discard any excess. Return onion to blender and combine with sugar and oil. Mix well. Add dry mustard and salt. Add vinegar. Blend all ingredients well. Add poppy seeds and slowly combine with other ingredients. Do not blend. Refrigerate overnight for best flavor. Use on Mandarin Orange Salad.

 

 

 

Mandarin Orange Salad

 

Romaine Lettuce

1 Can Mandarin Oranges

Toasted Slivered Almonds, optional

 

Wash and cut lettuce. Keep cold. In a serving bowl, combine lettuce, mandarin oranges, and almonds. Toss with Poppy Seed Dressing. Serve immediately.

 

 

French Salad Dressing

 

1 Cup Oil

1/2 Cup Sugar

1 Cup Ketchup

1/4 Cup Vinegar

1/4 tsp Garlic Salt

1 tsp Worcestershire Sauce

1/8 tsp Tabasco Sauce (or more to taste)

1/4 tsp Pepper

1/4 tsp Paprika

 

Mix in blender.

 

 

 

This "Saving Dinner" book is SO great! It includes several menus with shopping lists--and options of making the meal low in carbs or not. This book makes it easy to eat low carb and still feed the kids! :) No work! Just copy the shopping list and head out the door!
